Here's a quick and easy (not to mention delicious, filling and vegan) dish that will satisfy pallets young and old (even my toddlers love it!) and be a welcome addition to any gathering.
Four Bean Salad
Original Inspiration from The Vegetarian Family Cookbook
Ingredients
4 cans beans I used black, pinto, dark red and garbanzo, you can use whatever you've got!
2 peppers, chopped I used yellow and red for color
1 red onion, chopped
2 cups frozen peas, thawed
2 T apple cide vinegar
1 t sugar
1 t salt
1 t thyme
Mix it all up in a big pretty bowl and let it marinate a few hours (for best taste)
We ate this MANY ways:
* In a wrap with salad greens
* Over cooked quinoa
* With whole wheat pasta and sriracha

ReplyDeleteThat looks really interesting! I'm going to have to give it a try. I'm trying to get the kids to eat beans, but I haven't succeeded yet. It's such a cheap way to get in that protein.
