Ingredients
4 tortillas I like the BIG 10" burrito size, or larger if you can find them (GFS has some 12")
1 can black beans
1 cup quinoa, cooked1/2 red onion, chopped
1 avocado, sliced
Prep
Rinse and drain black beans, then mash with a fork
Spread a thick layer of beans on two tortillas
Layer avocado and onion over beans
Layer a few spoonfulls of quinoa on top
Cover with remaining two tortillas
Cook
Heat each on a griddle or stove-top device on med-high heat until tortillas are golden brown and beans are warm.
I enjoyed mine with sriracha (SO good!) How did you enjoy yours?

Milk-free, Oil-free Mashed Potatoes
Ingredients
3 - 5 pounds potatoes
1/2 cup unsweetened non-dairy milk at room temp we used original soy
3/4 teaspoon salt (plus more for the water)
Several turns fresh black pepper
Cut potatoes into chunks. Place in a pot and cover with cold water, just above potatoes.
Spinkle about a teaspoon of salt into the water.
Cover and bring to a boil.
Once boiling lower heat to a simmer and cook for about 12 minutes,
until soft when poked with a fork.
Drain potatoes, then place back in the pot.
Do a preliminary mash with a potato masher or a fork, just to break them up.
Add milk, salt and pepper and mash until fluffy.
Yum-Oh & Oh-So-FLUFFY!
those quesadilla's look fantastic!! Do the beans hold the two tortillas together (like The cheese does in a traditional quesadilla)?
ReplyDeleteActually, they do! My only suggestion for quesadillas that don't fall apart would be: Don't use too much quinoa! It's dryer and causes the tortillas not to stick. :)
