Treats

This weekend wrapped up our Christmas Holiday celebrations with my Mother-in-Laws family.
I know better than to show up empty handed to a party, let alone a Christmas celebration!

I wanted to make something yummy and unique.
Something that would appeal to the ladies and the gents.
This is what unfolded:

Cranberry Bacon Butterscotch Bark

The Chocolate Peanut Bacon Bark recipe I borrowed from here but the
Cranberry Bacon Butterscotch Bark is a complete original!

Here's How To:

You Need:
2 Packages Butterscotch Baking Chips
1 Cup Dried Cranberries
6 pieces bacon

Then You:

1. Crisp the bacon.
You can do this whatever way you like. I chose to do mine in the mocrowave
and it worked out great. Line a microwave-safe dish with paper towel,
lay bacon in a single layer over the paper towel, and cover with an additional
layer of paper towel. I microwaved at 100% power for 5 minutes,
removed the fat-soaked paper and replaced it with new, then microwaved for
4 more minutes. Be careful when you take it out (use a hot pad!) it's HOT!

2. Melt the Butterscotch Chips
I did this in a homemade double boiler (metal bowl over a sauce pan with a few
inches of water on medium-low heat) stirring constantly. You can also melt in the
microwave but be very careful! Melting candy in the mocrowave is tricky and can go
wrong very quickly. If you choose the microwave use 50% power and 20 second intervals,
stirring well in between.

3. Line a cookie sheet with wax/parchment paper

4. Crumble the bacon and add it to the dried cranberries.

5. Spread the butterscotch mixture over the parchment paper

6. Press the cranberry/bacon mixture into the hot candy.
Don't worry if the butterscotch isn't completely melted, it will still work great!

7. Fridge it for an hour then cut and devour!
I used a pizza cutter, worked like a charm!
